These farms consistently have the best processing methods. Most of these methods are created by the farms themselves, elaborating on traditional processing methods and introducing new styles of fermentation from other industries.

First and foremost these farms produce outstanding quality consistently year after year.

3 x 25g bags of Carbonic Maceration Gesha Variety each with its own unique style from the world renowned farm of Finca Deborah. 

Finca Deborah produces some of the most sought after coffees year after year. These lots are so rare that they are now sold almost exclusively through auctions.

This is an excellent opportunity to taste how processing can affect the flavour of coffee. Plus it’s a great chance to taste not 1 but 3 super high quality Gesha lots.

Jamison Savage and Finca Deborah have become synonymous with quality coffee, globally, with Finca Deborah winning prestigious coffee competitions around the world. Jamison is now pre-booking his coffees well before the season starts.

Illumination - Washed Carbonic Maceration

Illumination is a classic washed carbonic maceration. To Jamison, this means that the cherries are harvest perfectly ripe, reading 21 - 24 BRIX. They're hand selected, then pulped, with the results going into a stainless steel tank for an extended period of time, monitoring PH, temperature and CO2. Once the targets are met, the coffee is placed in shaded raised beds, where it will remain away from UV light until ideal moisture levels are achieved.

Echo - Cascara Infused Washed CM

Echo is an elevated take on Illumination. Rather than a classic washed carbonic maceration, Jamison adds additional Cascara as an infusion to the pulped Geisha, with the results going into a stainless steel tank for an extended period of time, monitoring PH, temperature and CO2. Once the targets are met, the coffee is placed in shaded raised beds, where it will remain away from UV light until ideal moisture levels are achieved.

Vivid - Natural CM Washed Finish

Vivid is a combo process. First, it's a whole cherry natural Carbonic Maceration, meaning red-ripe cherries spend over 50 hours in sealed stainless steel tanks which are charged with CO2. Once the cherries are removed from the tanks, they're pulped and placed in shaded raised beds, where it will remain away from UV light until ideal moisture levels are achieved.
