She cultivates Caturra coffee in the \u003c\/span\u003e\u003cspan\u003eVerda El Tauso, municipality of Arboleda, Berruecos. Gladys \u003c\/span\u003e\u003cspan\u003eis a highly entrepreneurial woman, and together with her \u003c\/span\u003e\u003cspan\u003eyoungest child, she now manages the coffee farm. \u003c\/span\u003e\u003cspan\u003eShe has 1.5 \u003c\/span\u003e\u003cspan\u003ehectares planted with Caturra and Colombia varieties.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp style=\"text-align: left;\"\u003e\u003cspan\u003ePROCESSING\u003c\/span\u003e\u003c\/p\u003e\n\u003cp style=\"text-align: left;\"\u003e\u003cspan\u003eFor harvesting, the cherries are allowed to mature for 4 weeks. \u003c\/span\u003e\u003cspan\u003eOnly fully ripe cherries with a deep wine color are picked. \u003c\/span\u003e\u003cspan\u003eFloating is then performed to separate green, under-ripe, or \u003c\/span\u003e\u003cspan\u003edried cherries, leaving only the cherries suitable for \u003c\/span\u003e\u003cspan\u003efermentation. The coffee with mucilage remains on mats for an \u003c\/span\u003e\u003cspan\u003eadditional 30 hours, then undergoes two washes to separate the \u003c\/span\u003e\u003cspan\u003ehoney from the bean before moving to drying.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp style=\"text-align: left;\"\u003e\u003cspan\u003eFor drying, Gladys uses drying mats, laid out in open air on a \u003c\/span\u003e\u003cspan\u003esmall patio made of concrete and on soil. The coffee is spread \u003c\/span\u003e\u003cspan\u003eon these mats for 18 to 20 days until the beans are dry.
