We are beyond excited to introduce our first ever Honey Processed coffee from Ethiopia!! The Honey process is common in certain countries like Costa Rica but rare in countries like Ethiopia. We are stoked to see this processing method being used more often around the world.
This lot from Ethiopia is absolutely stunning. It has lots of nice citrus acidity ranging from orange to grapefruit in intensity and flavour combined with a sweet wildflower honey. What really does it for me with this coffee is the intensely sweet/floral honeysuckle note. I absolutely love it.

This special Honey lot comes from the Abore washing station, near the village of Bombe in Sidama, Ethiopia. It is compromised of coffee harvested from 341 surrounding farms. Only ripe cherries were selected, de-pulped, and placed directly on raised beds for drying. Coffee was moved multiple times a day over a 12 day period until it was dried to ideal moisture levels.
In general, Honey processing has helped improve cup score and complexity when it comes to offerings from this washing station.
